Dave's Garden Cookbook: SAUCES FOR PASTA : Carbonara

4 rashers of bacon
1/2 cup cream
pinch paprika
1 egg
1 egg yolk extra
60 gr. grated parmesan cheese
30 gr. softenned butter

Remove rind from bacon, cut bacn into thin strips. Place bacon into frying pan over low heat, cook gently until bacon is crisp.Drain off bacon fat from pan, leaving only 2 Tbsp approximately of bacon fat. Add cream and paprika, stir until combined.
Place egg, egg yolk and 30 gr.of the grated parmesan cheese into bowl, beat until combine. Add the bacon-cream mix.
Combine with cooked pasta, season with pepperand the softenned butter, sprikle with remaining grated parmesan cheese

  Extra Notes  
Traditionally, for Carbonara dish, fettucine or tagliatelle pasta is use.
Serves 6.
