Southern Style Lemon Meringue Pie

|9-inch unbaked pie crust|
1/2 cup raspberry preserves
1 cup sugar
1/4 cup cornstarch
1/2 teaspoon salt
1-2/3 cups water
2 tablespoons margarine
1-1/2 teaspoons grated lemon peel
1/3 cup lemon juice
1/4 teaspoon cream of tartar
6 tablespoons sugar
|Heat oven to 450 degrees. Bake pie crust for|
12 to 15 minutes or until light brown,cool.
Spread preserves in bottom of cooled pie crust.
In saucepan combine sugar with cornstarch and salt.
Stir in water,blend until smooth. Cook over
medium heat until mixture boils and thickens.,
stirring constantly,boil 1 minute. Remove
from heat. Blend small amount of hot mixture
into egg yolks. Return egg yolks to saucepan,
blend well. Cook just until mixture begins to
bubble,stirring constantly. remove from heat,
stir in margarine,lemon peel and lemon juice.
Cool 15 minutes and pour into baked pie crust.
