2 pounds potatoes(small red or yellow potatoes are best)
3 large garlic cloves, minced
2 tbs. olive or salad oil
1/2 tsp. salt
1/4 tsp crushed red pepper (or not)
1 tsp. grated lemon peel
1 or 2 green onions chopped
Or you can use 1 tsp. fresh herbs such as Rosemary or 1/2 tsp dried herbs
Instructions
Cut unpeeled potatoes into two inch chunks.
In 2 1/2 quart casserole combine potatoes, garlic, oil, salt and pepper. Cook, covered on high 14 to 18 mins ( this really depends on YOUR microwave) until potatoes are tender, stirring twice during cooking. Stir in lemon peel and green onion. Let stand, covered, 5 minutes. Garnish with thin strips of lemon peel. Enjoy!

It is best with brand new potatoes, if you have them. I used to fix in in Canada when the new potatoes came out in the early summer. People wait for them to come in and line up for them. Sooooooooooo good!
