1 c. sugar
1/2 c. corn syrup
1/8 tsp. salt
1 c. lightly salted nuts (I use dry roasted in
the jar)
1 tsp butter
1 tsp vanilla
1 tsp baking soda
Instructions
Mix sugar, syrup and salt in a 1-1/2 quart
microwave bowl(don't use too big a bowl -
one with a lip is helpful, too). Cook on HI
for 4 minutes.
Stir - add peanuts - stir - cook on HI for 4
minutes
Stir - add butter and vanilla - cook on HI for
1-1/2 minutes
Stir - add baking soda - stir well, pour onto
cookie sheet covered in foil (I use
cardboard covered in foil)
Let cool on sheet on baking racks - then
break into pieces
TIPS - You have to move fast with this - it
is best to have everything ready - it is very,
very hot at the end. Try to use exact
measurements - it is crucial.
Extra Notes
I have to give credit for this recipe to my friend Rosemary!
