The 2001 Dave's Garden Cookbook

Pimento Mix

By mystic

Category: Canning and Freezing

2 cups ground pimento pepper(or red mango peppers)about 10 peppers
cup sugar
1/3-cup vinegar
cup pepper juice
1/3-cup water
2 tablespoons butter
1 tablespoon dry mustard
2 tablespoons flour

Combine all the ingredients in a large pan, mix well and boil for 10 minutes.
Seal in hot jars that have been boiled and seal with hot lids that have been boiled.
Turn the jars upside down to help seal. You can also freeze this.I use the pint jelly jars to put this in.

  Extra Notes
Just add to shredded cheese and you have great pimento cheese. A pint jar makes 2lbs.of cheese.
