1# country sausage
1/2 cup fresh parsley
1/2 cup chopped green onions
1 pint of oysters, liquid reserved, oysters chopped large
2-3 hamburger buns, dried in over and crumbled
1/2 block of butter
Juice of 1/2 lemon
Crumble sausage in lightly greased pan and cook slowly till it begins to fry. Add chopped oysters, parsley, and green onions. Cook together for 10 minutes.
Mix bread, butter and lemon juice. If not moist enough add oyster water. Blend well. Put in a casserole and top with bread crumbs. Bake at 350* for 25 minutes
November is the time of year when our oysters start tasting good. The cool waters of the Gulf gives way to a bountyful harvest. Every year a friend of ours would give my dad a sack of oysters at Thanksgiving and mom would cook this for us, it just would not be Thanksgiving dinner without it for me!
