Dave's Garden Cookbook: Best Biscotti

3 1/4 cup all purpose flour|
2 cups sugar
1 tsp. baking powder
1/4 tsp salt
2 egg yolks
1 tsp vanilla flavoring
1/2 tsp almond flavoring
1 2/3 cups almonds, toasted and coarsely chopped
Preheat oven to 350, line a large cookie sheet with parchment. |
In a large bowl, whisk together dry ingredients.
In a small bowl, whisk together eggs, yolks, and flavorings.
Add wet to dry stirring with a wooden spoon until a dough forms. Stir in almonds.
Scoop dough onto cookie sheet in the form of two logs. Bake for 35 minutes or until done. Cool for 10 minutes. Cut crosswise on the diagonal into 3/4 inch slices and bake for another 10-15 minutes or until pale golden. Cool thoroughly.
I use this as a base for other flavors. Add shaved chocolate and orange peel, or powdered saffron and fresh grated lemon peel (add with eggs). Use different nuts, dip in chocolate, white chocolate, be creative.
