Grandma Betty's Stack Cake

  Ingredients  
1/2 C. SHORTENING
1/8 C. SUGAR
1/3 C. MOLASSES
1/2 C. BUTTERMILK
1 beaten EGG
3-1/2 C. FLOUR
2 tsp. BAKING POWDER
1/2 tsp. SODA
1/2 tsp. SALT
1 tsp. GINGER
1 tsp. VANILLA

  Instructions  
Cream shortening with molasses, add egg and vanilla. Sift all dry ingredients and add alternatley with the buttermilk. Beat to a stiff dough. Roll out like pie crust. Cut circles with a pie pan. Place circles on lightly greased cookie sheet. Bake 12 to 15 minutes at 375. This should make about 9 layers.

stack the layers, using a well flavored apple sauce (cinnimon, nutmeg...what ever you like in it), or Applebutter in between layers....like a Torte.

Let set a few hours before serving. Keeps well.

  Extra Notes  
This was always our "Christmas Cake" at our home in WV...we couldn't afford all that expensive fruit and nuts for a Fruit cake! Grandma had 2 round, cast iron griddle pans she always used for this cake. And as a child, I was ready for the "scrap dough" to roll into "Gingerbread Men"
