Chocodot Pumpkin Cake

|4 large eggs|
2 cups sugar
1 1/4 cup cooking oil
2 cups cooked pumpkin
2 tsp. vanilla
2 tsp. butter flavoring
1 cup flour
2 tsp. baking powder OR 1 tsp. soda
1 tsp. salt
2-3 tsp. pumpkin pie spice
1 cup Grapenuts, Bran Buds, FiberOne, etc. cereal
1 1/2 cups chocolate chips
1 cup finely chopped nuts
|Beat the oil, eggs, sugar, pumpkin, vanilla, & butter flavoring together well. |
Sift together the flour, baking powder or soda, salt, & pumpkin pie spice. Add to wet ingredients and beat on medium speed 2 minutes.
Add the chocolate chips, cereal, & nut meats and stir in just until well distributed.
Bake at 350* in a well greased 9 X 13, bundt pan, sheet cake or jelly roll pan until a tooth pick comes out clean. Frost with caramel, chocolate or cream cheese icing.
|This recipe came from the Kellog company so many years ago that they can't even find it in their files anymore. I lost the pamplet containing the recipe for years & wrote asking for it about 5 years ago. They replied that they had no record of such a recipe but sent me a new pamphlet containing some other ones including almost the same recipe only it used applesauce and didn't have the chocolate chips!|
This is a heavy moist cake that goes over well at pot luck and family dinners.
