Dave's Garden Cookbook: TUNA PUFF

1 can Cream of Mushroom soup
1 cup shredded American cheese (or cheddar)
1 cups cooked rice
1 can drained tuna
1/4 tsp. Pepper
3 Eggs, separated
- onion

Combine soup and cheese in large saucepan. Heat slowly, stirring constantly until cheese melts completely. Remove from heat. Stir in rice, tuna, onion, and pepper. Beat egg yolks in a small bowl. SLOWLY stir into the tuna mixture. Let mixture cool. Pre-heat oven to 350 degrees.
Beat egg whites until they form firm peaks. Fold into the cooled tuna mixture until no streaks of white remain. Pour into an 8"x 8"x 2" baking dish. Spread evenly. Bake at 350 degrees for 40 minutes or until puffed and golden (firm in the center). Cut into squares and serve hot.
