The 2001 Dave's Garden Cookbook

Cornish Hens Mandarin

  Ingredients  
4 cornish game hens
1/4 c. butter
1 1/2 tsp. allspice
2 ( 11 oz.) cans mandarin oranges
2 Tbsp. cornstarch
2/3 c. light Karo syrup
2 Tbsp. sesame seed
2 Tbsp. lemon juice
1/4 tsp. ginger

  Instructions  
Place hens in roaster. Bake at 375 degrees for 1 hour, turning after 30 minutes and basting with butter and 1 teaspoon allspice. Increase temperature to 25 degrees; bake for 15 minutes longer. Drain oranges; reserving juice. Blend the juice with cornstarch in a pan; add oranges and corn syrup. Bring to a boil, stirring constantly. Cook for 2 minutes; add remaing ingredients. Serve sauce over hens. Yield: 4 servings.
