Chinese Veal

1 lb. cubed veal
2 Tbsp. hot oil
2 chopped onions
1/2 c. uncooked long grain rice
1 can chicken rice soup
1/4 c. soy sauce
1 c. water
1 c. chopped celery
1 (10oz) pkg. frozen green peas
1/4 c. toasted almonds

Preheat oven to 425 degrees. Brown veal in oil in skillet; add onions and saute until golden brown. Pour browned veal and onions, rice, soup, soy sauce and water into 2 qt. baking dish; cover and bake for 40 minutes. Uncover; add celery and peas. Cover and bake for 20 minutes longer. Sprinkle with almonds. Yield: 10-12 serv.
