3 Tbsp. dry mustard
2 Tbsp. vinegar
1 Tbsp. Worcestershire sauce
1 tsp. minced garlic
6-7 lb. leg of lamb
Mix first 4 ingredients into a paste. Roast lamb in a 450 degree oven for 30 minutes.
Remove from oven; prick lamb all over with a sharp knife and cover entirely with mustard paste. Add 1 cup of water to pan; turn oven to 325 degrees. Roast for 3 to 4 hours until done. Baste occasionally.
Yield: 8 servings.
