Dave's Garden Cookbook: NY Cheesecake

1 1/4 cups graham cracker crumbs
3 Tbsp brown sugar
1/2 tsp cinnamon
1/4 cup butter, melted
4 (8oz) pkgs cream cheese
1 1/4 cups sugar
2 Tbsp vanilla
1/2 cup sour cream
1/2 cup heavy cream
Mix crust ingredients, press into 10" springform pan. Bake 350 10-15 minutes.|
Mix all filling ingredients except eggs, beat until smooth. Fold in eggs, beat only until blended. Bake 350 45 minutes. Let cool in oven with door open 5-8 hours. Refrigerate 8 hours. Serve with canned pie filling as topping, if desired.
The key to making a cheesecake that doesn't crack is to make sure to not overbeat the batter (adds too much air), and also to let cool slowly.
