Dave's Garden Cookbook: Marinated Pheasant

The 2001 Dave's Garden Cookbook

Marinated Pheasant

1 C. Mazola oil
1 clove garlic, minced
3/4 tsp. pepper
2 ts. salt
2 tsp. ginger
6 oz. Seven-Up
1 cut up pheasant or boned breasts

Combine first 6 ingredients in zip lock bag; add pheasant. Marinate for 4-8 hours. Drain; reserving marinade. Dip pheasant in flour; fry in Crisco until browned. Place pheasant in roaster; cover with reserved marinade. Cover and bake 1 hr. 15 min. at 350 degrees. Serve with wild rice.
Yield: 4 servings.
