|Rub duck inside and out with salt and pepper. Pat lightly with flour. Place onion and apple inside. Place duck on a large sheet of heavy foil; pour on wine. Sprinkle with thyme. Place pat of butter on breast. Wrap tightly; place in shallow pan. Bake 3 1/2 hours at 325 degrees. |
Serve on heated platter; pour on pan juices and garnish with parsley. 2 servings.
