Italian Style Rabbit Stew

  Ingredients  
1 rabbit, cleaned & cut up
6 carrots chopped
6 stalks celery chopped
1 large onion chopped
fresh parsley chopped
2 cloves garlic chopped
2 tsp. rosemary
fresh or dried sage
salt & pepper to taste
1 C. red wine
1 can solid pack tomatoes
1 tsp. aalspice
3 bay leaves

  Instructions  
Place rabbit in a large bowl. Add carrots, celery, onion, parsley, garlic, rosemary, sprinkle of sage, bay leaves, allspice, salt, pepper, and wine. Allow to set in refrigerator for 12 hours; stirring occasionally. Brown rabbit in oil. Add marinade juices and tomatoes. Simmer until tender, about 1 hour. 4-5 servings.
