Golden Vegetables Soup

1 Tbsp. butter or margarine
1 medium onion, skinned and finely sliced
4 medium carrots, peeled and sliced into short strips
6-8 celery stalks, trimmed and sliced
4 swedes, peeled and sliced into short strips
1 small broccoli or cauliflower broken into small flowerets
1/2 tsp ground cumin or tumeric
1 1/2 litres light stock
salt and freshly ground pepper
snipped chives , fresh parsley or coriander to garnish


Melt butter in a saucepan, add vegetables. Cover saucepan and cook gently for a few minutes, shaking the pan from time to time.

Add the ground cumin or tumeric and cook for a further 3 minutes. Add the stock and adjust the seasoning. Bring to the boil and simmer gently for 15 minutes or until the vegetables are tender.

Serve garnished with the chives , fresh parsley or coriander.

  Extra Notes  

Make 6 serves

You can add any other vegetables like peas, beans and even potato to make it a winter soup-dish.
