The fuzzy hairs covering the light green skin of this melon give it its common name, "hairy melon." Also known as jointed gourd, this variety produces round or cylindrical fruits that are harvested soon after the flowers drop off, when the melons are about 6" long. Once peeled, the sweet and succulent flesh can be cut into chunks for steaming, stir-frying or braising. The hollowed melons also can be stuffed with meat.
