I had the chance to exchange emails with AgriCanada and a couple of Canadian reporters about the name. We finally agreed that the correct name ends with "rotes Auge" - German of red eye" (singular) - and the first picture I was able to take actually shows one beautiful red eye. Looking forward to check yield and actual tuber size once I regrow them with a seed tuber ... appears to be waxy.
