'Shirohada' is an early variety, with nice white skin on the root, and contains no calories. High in fiber and minerals, iron, chromium, magnesium, calcium, and potassium.

Prepare by cutting root in fine strips, soak in water 2 or 3 hours, boil and use in salads or stir fry. Burdock also has medicinal uses.
