Water-soluble carbohydrates that occur naturally in many ripe fruits and vegetables; pectin yields a gelatin-like substance used to thicken jellies.

Pectins are present in many plant tissues and in some fruits. Pectins can also be very easily oxidated, becoming dark. Apples, pears and other fruits are rich in pectins, that's why, when you cut them, they become dark in a minute.
