Describes fruit that has just begun to ripen. In tomatoes, a breaker is just beginning to turn color and has blush of the new color at the blossom end. Some seed-savers consider seeds harvested from breakers to be higher quality seed stock that is more likely to germinate than seeds harvested from over-ripe fruit.
