Pickeled Onion

Does anyone have a recipe for pickled onions. The kind you get in a gallon jar, really large onions.
My sons love these things and they are sort of expensive to buy by the gallon.

I too am looking for a recipe for pickled red onions that is similar to bread and butter pickles. I love the onions found in the bread and butter pickles of a local pickle manufacturer. I want to do just the onions.

Moosewood Pickled Red Onions

1cup cider vinegar
1cup water
Up to 3 Tbs. brown sugar
1 tsp. salt
1 tsp. whole peppercorns
4 medium red onions, very thinly sliced

First, fill a teakettle with water and put it on to boil. Meanwhile, combine vinegar, 1 cup water. sugar, salt and peppercorns in a medium-sized bowl and stir until the sugar is dissolved.

Place the sliced onions in a colander in the sink and slowly pour boiling water over them. They will wilt slightly. Drain well and transfer to the bowl of marinade.

Cover and allow to marinate, refrigerated or at room temperature, for at least several hours. Store in the refrigerator (they keep practically forever) and use as needed. These are great with any bean salad, with sandwiches, in an antipasto, or on pizza.
