7th annual county fair recipes!

It's that time again! Do you have a favorite recipe you'd like to enter in this year's DG county fair? Here are the contest rules (we have a new prize for first place this year!) http://davesgarden.com/contest/dg-county-fair-2016

Kingsville, TX(Zone 9b)


Preheat oven to 350.
Generously grease a 9" X 13" pan.


1 C shortening
2 C sugar
3 C flour
4 Eggs
1 C buttermilk
1 tsp. Baking Soda
1 ½ tsp. Baking powder
1 tsp Salt
1 ½ Tbsp Vanilla Extract
1 C Pecans, coarsely chopped
1/4 C Pecans halves or larger pieces. (Optional)


Beat shortening & sugar together until light and fluffy.
Add buttermilk and vanilla, mix well.
Stir dry ingredients together lightly, in separate bowl.
Add eggs and flour mixture to creamed mixture alternately, mixing well after each addition. (1 egg, approx 1/4 of flour mix, beat well, repeat until all is added).
Gently fold in pecans. (Batter will be quite thick)

Pour into prepared pan, top with larger pecan pieces. Bake at 350 degrees approximately 45 minutes*, or until toothpick inserted iin center comes out clean.

* Ovens often vary, so begin checking for doneness at about 20 or 25 minutes, as soon as cake top is nicely rounded.

Broccoli & Cauliflower Salad

1 head of cauliflower, cut into bite-sized pieces
2 heads of broccoli. cut into bite-sized pieces
½ cup of diced red onion
½ cup of diced celery
1 cup of dried Cranberries
1 cup of pecans, chopped


1 cup of mayo
¼ cup of apple cider vinegar
½ cup of sugar

Directions: Mix first four ingredients together. Set aside.
Mix dressing ingredients together.
Lightly toss everything together just before serving.
