My mom, bless her, decided to can my 50lbs of peaches while I was at work. For some reason she chose to use half the regular amount of sugar for the syrup. This means I have 30 quarts of peaches my daughter won't eat (honestly, I don't like them much either). Can I open, dump the syrup, add fresh syrup and re-can?

Why won't your daughter eat them and you don't like them much? Peaches are usually so sweet to begin with that they shouldn't need hardly any sugar at all. I don't can them, I freeze if I do anything so I can't be of much help. :>)
