The protuberance is a flower stalk

When you have hen and chick's with a protuberance flower stalk, what do you do with it? Replant and leave alone?

I do nothing. At least I don't remember doing anything to this stalk last summer, when the photo was taken.

I don't do anthing either. I don't even know if there are seeds in it. So I just leave enough alone.
Although yours doesn't seem to be the same kind as mine, they do have the same sort of bloom.

Could it be that your plant is a Sempervivum, sorry I don't know which, there are so many of them Here's an Echevaeria x imbricata

m2k, your's looks more like Sempervivum than mine. Look here:

Baa, I think mine is that variety too but with less prominent purple coloration in the tips.
