The best tasting part, are the yellowish pods/fruit, each with a large seed inside. The surrounding unfertilized carpels, are also edible, just not as sweet. They are generally fried or sautee'd and used like a vegetable. The unripe fruit, when young is used entirely as a veggetable in coastal regions of South India.
The fruit is also sun dried and used as a snack, in chips and stored for several months..since you get so much from one fruit!!
