Fail proof aussie sponge

4 eggs
3/4 cup sugar ( castor)
3/4 cup corn flour
3 tablespoons custard powder
1 teaspoon baking powder
1/2 teaspoon cream of tartar
1 teaspoon vanilla


place eggs and sugar into a mixing bowl ( preferrably one you can switch on and walk away from)
turn on high speed and leave for ten minutes.
The mixture will become thick and creamy. The longer you whip it the better.
when the consistancy is reached... turn to very low add vanilla and then fold in sifted dry ingredients.
place into an 8" sponge tin in the oven 350 for about 25 minutes..depending on your oven.... keep an eye on it... it should be golden brown.
I do double this mixture for 30-35 minutes.

let cool in the tin and then turn out and fill as desired.

Extra Notes:

providing you beat it enough and gently FOLD in the dry ingredients, you will find this recipe ;ight and fluffy and ever so yummy!
