Coconut Custard Pie

1 pie shell, 9 inch
1/2 c. granulated sugar
1/4 tsp. salt
2 1/2 c. milk, scalded
1 1/2 tsp. vanilla
4 eggs slightly beaten
1 c. grated coconut

Preheat oven to 350 degrees. Bake pie shell 8 to 10 minutes, until just slightly brown. Combine the sugar, salt, milk and vanilla; add eggs and coconut, and mix well. Pour into pie crust; and bake for 35 minutes, until light and golden. Do no overcook; as it ill turn the custard watery.

  Extra Notes  
This is a wonderful all occasion dessert. Can omit coconut if desired.
