Sweet Potato Pie

1 pie shell, 9 inch
2 c. mashed sweet potatoes
2 eggs, well beaten
1 1/4 c. milk
3/4 c. sugar
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 Tbsp. rum
4 Tbsp. melted butter

Preheat oven to 425 degrees. Line a 9 inch pie pan with the pastry dough. Combine remaining ingredients in a large bowl and beat until smooth and well blended. Pour into pie shell. Bake for 10 minutes. Reduce heat to 300 degrees, and bake for 50 minutes, or until filling is firm.

  Extra Notes  
Long ago the sweet potato was called a "long potato" or "Virginia potato". Southern states take pride in this pie.
