The Best Zucchini Bread

3 eggs
2 c. sugar
3/4 c. oil
2 t. vanilla

1 small can of crushed pineapple, drained
2 c. shredded zucchini

3 c. flour
1 t. soda
2 t. baking powder
1 t. salt
1 t. cinnamon
1 c. chopped nuts or coconut (coconut is my favorite)

May add: 1 c. raisins or 1 c. dates.
May substitute: apple for zucchini.

Beat the first 4 ingredients together until creamy.
Add the next 2 ingredients. Beat well.
Add the last 6 ingredients. Stir in thoroughly.
Divide into two large greased bread pans.
Bake for 1 hour or longer at 325 degrees.
