Vegetable Beef Soup

2 very meaty soup bones (you can add more beef if you wish)
1 large can tomatoes, cut into bite size pieces
5-6 large potatoes, cut into 1 inch dice
1 can green beans (or 2 cups fresh green beans)
1 can sweet corn (or 2 ears of corn, off the cob)
1 small head white or green cabbage, sliced
6 onions, sliced like the cabbage
4 large carrots, peeled and cut into slices
4 or 5 large ribs of celery, cut into chunks
2 cloves garlic, crushed
You can add none, any or all of the following herbs and spices:

Put soup bones, crushed garlic, and beef into a large soup pot with water to fully cover plus 1 quart extra, and salt to taste. Boil it all day, till meat is falling off the bones and the water is a nice rich brothy looking stuff and your kitchen is steamy and warm and smelling luscious. Take out bones, cut meat off bones and into bite size pieces, then return all to pot. Skim the top if necessary.

Add the carrots, onions, potatoes, celery. Cook till these are just tender, then add the rest of the vegetables and simmer till it's soup. Use the juice from all cans of vegetables except green beans(discard that juice as it can taste metallic.)

This is always better the second day, so if you want to make a day ahead and refrigerate or even freeze, it's a great thing to do. Serve with warm rolls or hot bread and butter, crackers... mmmmm...!

  Extra Notes  
This was my family's staple soup... the one Mom made and then would call us grown kids and say, "I made soup!" A sure way to gather us back home. The aroma while it's cooking (all day) and the fun we had cutting the veggies together and enjoying it with hot home made bread and butter... it is a wonderful, warm and delicious family memory.
