Pumpkin Soup

1kg (2lb 4oz) pumpkin flesh, with the skin removed
400ml (14fl oz) chicken or vegetable stock
6 black peppercorns
1-2tsp fresh root ginger, peeled and grated
1 stem lemongrass, finely chopped (optional)
4 whole cloves
soured cream to serve


Put the pumpkin in a large saucepan with the stock, peppercorns, ginger, lemongrass (if using) and cloves. Bring to the boil and simmer gently, covered, for 30-40 mins until very soft.
Take out the peppercorns and cloves and whiz the mixture in a blender. Add enough water to give the soup a creamy texture and season with salt and freshly ground black pepper. To serve, warm through, pour into bowls and add a swirl of soured cream.
