The 2001 Dave's Garden Cookbook

1 1/2 C. peanut butter
1/2 C. butter-room temp
3 1/4 C. confectioners sugar
1 tsp. vanilla extract
12 oz. semi-sweet chocolate chips or pieces

Set aside chocolate. Mix together all the other ingredients, into a thick dough. Use tablespoon to measure, then roll into round balls. Using double boiler, or microwave at half power, melt chocolate. Roll balls in chocolate, leaving nickle sized top uncovered. Set on lightly greased sheet or waxpaper until chocolate sets. Then store in containers and refrigerate.
Makes 40-45

I don't know where this recipe came from, but it has been in my family for years. My elders have been making it as Christmas candy for as long as I can remember. Now that I have a family of my own, it has become tradition for us as well.
