Best Peanut Butter Cookies and 'Kiss Cookies'

1 C. shortening
1 tsp. vanilla extract
1 C. sugar
1 C. brown sugar
2 eggs-beaten
1 1/2 C. peanut butter
3 C. flour
1/8 tsp. salt
3 C. flour
2 tsp. baking soda

Preheat oven to 350 and grease cookie sheet(s). Cream together shortening, vanilla and sugar. Add beaten eggs and beat well. Stir in peanut butter. Mix together flour, salt and baking soda and add to peanut butter mix. Form into one inch balls and place on cookie sheet. Dip fork in sugar and press balls to make criss cross pattern. Bake 8-12 minutes. Makes 50-60 cookies
For a nice substitution, prepare exactly the same way, but do not press balls with fork. Bake 8-10 minutes, remove from oven and immmediatly press unwrapped Hershey Kisses into center of balls to flatten into cookies. These need to cool a fairly long time before storing.

  Extra Notes  
After making and tasting many kinds of peanut butter cookies over the years, this modified recipe is my very favorite. I also use this recipe with the Hershey Kisses because it has the best peanut butter flavor.
