Spinach & Artichoke Dip

1/2 white onion, chopped
1 stick butter
2 sm. boxes frozen chopped spinach
1 lg philadelphia cream cheese
3/4 cup parmesan cheese
1-8 oz. sour cream
1- 8 oz monteray jack cheese
1 sm can artichoke hearts

Salt & pepper to taste

Saute onion in butter
Steam and drain spinach
Add drained spinach to onion and butter
Add philadelphia cream cheese, mix well
Add sour cream
Drain artichoke hearts and mash with fingers. Add to mixture
Turn butter off at any point after adding spinach
Add parmesan cheese and mix well.
Add monteray jack cheese and either keep your burner on low heat or put mixture in microwave safe bowl to melt the cheese. It's best if you cut the cheese in small pieces so it will melt faster.

Serve with tortilla chips.
