Marys Magic Cakes

2 c. sugar
3 c. flour
2 t. soda
1 t. salt
(for chocolate 6 heaping T. cocoa, for spice 1 t. pumpkin pie spice + 1 t. cinnamon)
2/3 c. oil
2 c. cold water
1 T. cider vinigar (if you use white vinigar, use 2 T.)
1 t. vanilla

Mix all of the dry ingredients, mix the liquid ingredients, mix together, pour into 9X13 pan and bake at 350 degrees until toothpick inserted in center comes out clean. About 30 minutes.

  Extra Notes  
This is a great no-egg recipe.
There is a fun way to make this with kids. Put the dry ingredients into the pan, make three holes, put the oil in one hole, the vinigar in one hole and the vanilla in the last hole. Pour the water over it all and it will foam up. Mix and bake as usual. The kids love to watch the magic cake foam up and then eat it like a regular cake.
