Montana Venison Roast

1 venison round cut about 2" thick
1/4 c. flour
1/4 c. butter
1 large onion, chopped fine
1 clove garlic, minced
2 Tbsp. Catsup
1 Tbsp. Worcestershire sauce
1 C. Claret wine
1 tsp. salt
1/2 tsp. pepper
1 (6oz) can mushrooms

Preheat iron pot or dutch oven. Rool meat in flour; brown on both sides in butter over high heat; stirring to prevent burning. Cover with onion and garlic; add catsup, worcestershire, wine, salt and pepper.Cover and cook over very low heat until done, about 4 hours. Add mushrooms to gravy. Yield: 6 servings.
