Mississippi Mud Cake

2 sticks margarine
1/2 c. oil
7 Tbsp. cocoa
1 c. water
2 c. flour
1 3/4 c. sugar
2 eggs
1 tsp. baking soda
2 tsp. vanilla
1/2 c. buttermilk
nuts (optional) preferably pecans
6 Tbsp. milk
1 box confectioners sugar
1 bag miniature marshmallows

Boil together 1 stick of margarine, 1/2 cup of oil, 3 1/2 tbsp. cocoa, and 1 cup water. Add this to 2 cups flour and 1 3/4 cup sugar mixed. add 2 eggs, 2 tsp. baking soda, 1 tsp. vanilla and 1/2 cup buttermilk. Add nuts; mix well with spoon. Bake in 9x13 inch pan for 30 minutes at 325 degrees.

Icing: Boil 3 1/2 Tbsp. cocoa, 1 stick margarine, and 6 Tbsp. milk. Add this to 1 box confectioners sugar. Add 1 tsp. vanilla. Mix and pour over hot cake.
Optional: Put small marshmallows on top of hot cake before pouring icing.

  Extra Notes  
I don't consider any of the ingredients as optional....they're essential to this wonderful cake!
