Pinto Red

1/2 lb. Pinto Beans, dry
2 large onions
1 small can tomato sauce
2 cups diced, left over roast
4 slices bacon
salt & epper to taste

Cook pinto beans as usual until tender. Then put into baking dish one layer of beans, chopped onions for the next layer, roast next layer, pour tomato sauce over, and top with bacon slices. Bake at 350 degrees for 40-45 minutes or until done.

  Extra Notes  
This is especially good serve with Jalapeno Cornbread! (Recipe in Bread Section of this cookbook).
