Sour Cream Lemon Pie

1 c. sugar
6 Tbsp. cornstarch
1 1/2 c. milk
3 egg yolks, slightly beaten
1 tsp. lemon rind, grated
1/2 c. lemon juice
1/4 c. margarine
1 c. sour cream
2 drops yellow food coloring

Mix sugar and cornstarch in a saucepan. Gradually add milk, stirring until smooth. Stir in egg yolks, lemon rind, and juice. Add margarine. Cook over low heat, stirring constantly until mixture is very thick. Chill and then add sour cream. Pour into baked pie crust. Top with whipped topping that has been sweetened and flavored with vanilla to your taste. Serve chilled.


1 c. flour
1 Tbsp. sugar
1 egg yolk
pinch salt
6 Tbsp. cold margarine
1 Tbsp. cold water
1 tsp. finely grated lemon peel
1/4 tsp. almond extract

Combine flour, sugar, salt, and margarine. Mix until mixture resembles cornmeal. Add egg yolk, water, lemon peel, and extract. Mix well. Roll out on floured surface. Use 9 inch pie pan. Bake at 375 degrees for 15 minutes.
